Soft white table cheese, oily texture, without skin and holes, with a sour, pleasant, cool taste and aroma, traditionally produced from sheep's or goat's milk or mixtures thereof. It has a maximum moisture content of 75% by weight, and a minimum fat content of 40% by weight.

Did you know that

Galotiri is one of the most popular traditional cheeses in Greece. It has many decades of history and is a product of widespread popular consumption. Its compound name was probably due to its increased humidity and soft texture.

Bibliographic data from 1952 indicate that "the milk used is sheep's milk, and in particular that opera is produced at the end of the lactation period, that is, in August when it contained more solids."

With provisions nationally adopted to safeguard and protect Greek traditional cheeses, the State General Laboratory published in 1988 detailed specifications for galotyri, which guarantee its quality and protect consumers from misinformation.
