Croissants with vegetable filling

For the stuffed savory croissants, we first make the filling.

Peel the tomatoes, cut them in half, remove the seeds and finely chop the flesh. Cut all the vegetables into small squares.

Heat the olive oil and sauté the vegetables, except the tomatoes, for a few minutes, until soft. We do not want them to get colored or lose their shape.

Season with salt and pepper and quench with vinegar. Add the tomato flesh. Stir, add the herbs and remove. Add the cheeses. Stir and fill the croissants.

Recipe ingredients

  • 1/4 φλ. ελαιόλαδο 
  • 1 μελιτζάνα
  • 2 κολοκύθια τρυφερά 
  • 2 πιπεριές Φλωρίνης
  • 1 πιπεριά πράσινη
  • 2 ώριμες και σφιχτές ντομάτες
  • 1 σκ. σκόρδο
  • λίγη ρίγανη
  • λίγο θυμάρι
  • αλάτι
  • πιπέρι
  • 200 γραμ. τυρί Μπάτζιο
  • 100 γραμ. κασέρι
